ORGANIC INGREDIENTS

  • 140 g (1 cup) all-purpose flour "La Merveilleuse"
  • 5 ml (1 tsp) baking soda
  • 5 ml (1 tsp) ground cinnamon
  • 2,5 ml (1/2 tsp) ground nutmeg
  • 1 ml (1/4 tsp) salt
  • 1 large egg (55 g)
  • 160 g (1/2 egg) maple syrup
  • 35 g (1/4 cup) margarine or melted coconut oil
  • 240 g (2 cups) apples, peeled and grated
  • 90 g (3/4 cup) dates, finely chopped

PREPARATION

  1. Preheat the oven to 180 °C (350 °F). Grease a 23 cm x 13 cm (9 in x 5 in) pan and line the bottom with parchment paper.
  2. In a small bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, whisk together the egg, maple syrup, and margarine (or coconut oil).
  4. Incorporate the dry ingredients into the liquids and beat until the mixture has thickened (about 1 minute).
  5. Add the grated apples and dates, mix well with a wooden spoon.
  6. Transfer the dough into the pan and bake on the middle rack for 40 to 45 minutes or until an inserted toothpick comes out clean.
  7. Let rest for 10 minutes, then cool on a wire rack.
