ORGANIC INGREDIENTS
- 140 g (1 cup) all-purpose flour "La Merveilleuse"
- 5 ml (1 tsp) baking soda
- 5 ml (1 tsp) ground cinnamon
- 2,5 ml (1/2 tsp) ground nutmeg
- 1 ml (1/4 tsp) salt
- 1 large egg (55 g)
- 160 g (1/2 egg) maple syrup
- 35 g (1/4 cup) margarine or melted coconut oil
- 240 g (2 cups) apples, peeled and grated
- 90 g (3/4 cup) dates, finely chopped
PREPARATION
- Preheat the oven to 180 °C (350 °F). Grease a 23 cm x 13 cm (9 in x 5 in) pan and line the bottom with parchment paper.
- In a small bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, whisk together the egg, maple syrup, and margarine (or coconut oil).
- Incorporate the dry ingredients into the liquids and beat until the mixture has thickened (about 1 minute).
- Add the grated apples and dates, mix well with a wooden spoon.
- Transfer the dough into the pan and bake on the middle rack for 40 to 45 minutes or until an inserted toothpick comes out clean.
- Let rest for 10 minutes, then cool on a wire rack.
