Decadent coffee cream brownies with caramelized nuts Recipe Gluten-free and dairy-free (casein-free).

ORGANIC INGREDIENTS
Brownies:
- 1 box Brownie Mix
- 2 large eggs
- 85 ml (1/3 cup) light olive oil
- 45 ml (3 tbsp) water
- 12,5 ml (2 1/2 tsp) vanilla extract
- 90 g (1/2 cup) dark chocolate 70 %, in pieces
Caramelized nuts:
- 155 g (1 cup) walnuts
- 30 ml (2 tbsp) margarine *
- 30 ml (2 tbsp) maple syrup
- Salt
Coffee cream:
- 255 g (1 cup) dairy-free whipping cream **
- 30 ml (2 tbsp) cane sugar
- 7,5 ml (1/2 tbsp) instant coffee
- 5 ml (1 tsp) vanilla
Other:
- Kosher salt
PREPARATION
Brownies:
- Preheat the oven to 180 °C (350 °F).
- Line a square baking dish, 20 cm x 20 cm (8 in x 8 in), with parchment paper.
- In a bowl, combine brownie mix, eggs, oil, water and vanilla extract. Mix well with a wooden spoon.
- Add the chocolate pieces, stir again.
- Pour batter into the dish and even the surface with a spatula.
- Bake on the center rack for 25 to 30 minutes.
- The edges should be cooked and the center still soft.
- Set aside without unmolding.
Caramelized nuts:
- In a skillet over medium heat, melt the margarine. Add the maple syrup and mix everything together.
- Add the nuts. Stir continuously, until the liquid starts to change color. Careful, there's a fine line between perfectly cooked nuts and a burnt taste.
- Once ready, spread the nuts on a plate covered with parchment paper.
- Lightly salt and let cool.
Coffee cream:
- Put all the ingredients in a bowl, and using a stand mixer or mixer, beat until you get a nice whipped cream.
Assembly:
- Once somewhat or completely cooled, cut the brownies into 8 equal parts.
- When serving, place a brownie on a plate. Using a pastry bag or a spoon, top with some coffee cream. Careful, in order to keep the cream from melting, the brownies must be thoroughly cooled and served right away. However, we also like these brownies warm; the cream, even melting slightly, is just absolutely delicious.
- Add some nuts to the plate, and dust with a touch of kosher salt.

You won't be able to resist this totally decadent dessert!

*If you're not on a dairy-free diet, replacing margarine with butter is an option.
**We really like Becel's plant-based whipped cream, but there are other alternatives. If you're not on a dairy-free diet, substituting 35% cream is an option.
