ORGANIC INGREDIENTS

  • 70 g (1/2 cup) all-purpose flour "La Merveilleuse"
  • 25 g (1/4 cup) cocoa
  • 2.5 ml (1/2 tsp)  baking powder
  • 1 pinch of salt
  • 15 ml (1 tbsp) chia
  • 60 ml (4 tbsp) water
  • 100 g of 70% dark chocolate
  • 70 g (1/2 cup) dairy-free margarine
  • 145 g (2/3 cup) cane sugar
  • 65 g (1/4 cup plant-based milk substitute, to taste
  • 5 ml (1 tsp) vanilla

PREPARATION

  1. Preheat the oven to 180 °C (350 °F)
  2. In a bowl, combine the flour, cocoa and salt. Set aside.
  3. Finely grind the chia in a coffee grinder. In a small bowl, mix together the chia and water and let stand for 10 minutes.
  4. Melt the chocolate and the margarine in a double boiler.
  5. In a medium bowl, beat the chia mixture, sugar, plant-based milk substitute and vanilla at maximum speed of an electric mixer. Beat until smooth (about 2 minutes).
  6. Add the melted chocolate and stir everything using a whisk.
  7. Sift the flour mixture over the chocolate mixture and fold the dough gently with a spatula.
  8. Using a tablespoon, divide batter among 24 greased or paper-lined mini muffin cups. *
  9. Bake on the center rack for 22 to 25 minutes. The rim should be cooked and the center still tender.
  10. Place the mold on a wire rack and let cool completely before removing from the mold.

TIP

* Cooking:

The cooking time may vary slightly depending on your oven. In addition, using the paper molds, the time is a little longer than if you bake directly in the mold. In addition, it should be considered that cooking is faster with a dark mold than a light mold. My advice is to really watch your mini-brownies towards the end of the cooking time and as soon as the edges are done, remove them from the oven.

* Unmolding:

If you are not using paper molds, you really have to make sure you grease your baking pan well, using dairy-free margarine. You really have to wait for the mini-brownies to completely cool before removing them from the mold, gently going around each one with a knife to peel them off before removing them from the mold.
