ORGANIC INGREDIENTS

  • 235 g (1 2/3 cups) all-purpose flour "La Merveilleuse"
  • 5 ml (1 tsp) baking powder
  • 2,5 ml (1/2 tsp) baking soda
  • Pinch of salt
  • 5 ml (1 tsp) ground cinnamon
  • 1 ml (1/4 tsp) nutmeg
  • 2 medium eggs, separated
  • 100 g (1/2 cup) light olive oil
  • 165 g (2/3 cup) plant-based milk substitute*
  • 160 g (1/2 cup) maple syrup
  • 10 ml (2 tsp) vanilla extract
  • 2,5 ml (1/2 tsp) cream of tartar
  • 325 g apples (about 3) sliced finely

PREPARATION

  1. Preheat the oven to 180 °C (350 °F). Grease and flour a 20 cm X 28 cm (8 X 11 in.) pan.
  2. In a bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center then add the egg yolks, oil, plant-based milk substitute, maple syrup, and vanilla. Beat with a whisk for several minutes until the batter thickens.
  3. In another bowl, beat the egg whites. Start gently using an electric mixer, add the cream of tartar, then beat at highest speed until stiff peaks form.
  4. Using a spatula, gently fold the egg whites into the batter. Again with the spatula, add the thin slices of apple.
  5. Pour the batter into the pan and bake on the center rack for about 40 minutes, or until an inserted toothpick comes out clean.
