ORGANIC INGREDIENTS
- 235 g (1 2/3 cups) all-purpose flour "La Merveilleuse"
- 5 ml (1 tsp) baking powder
- 2,5 ml (1/2 tsp) baking soda
- Pinch of salt
- 5 ml (1 tsp) ground cinnamon
- 1 ml (1/4 tsp) nutmeg
- 2 medium eggs, separated
- 100 g (1/2 cup) light olive oil
- 165 g (2/3 cup) plant-based milk substitute*
- 160 g (1/2 cup) maple syrup
- 10 ml (2 tsp) vanilla extract
- 2,5 ml (1/2 tsp) cream of tartar
- 325 g apples (about 3) sliced finely
PREPARATION
- Preheat the oven to 180 °C (350 °F). Grease and flour a 20 cm X 28 cm (8 X 11 in.) pan.
- In a bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the center then add the egg yolks, oil, plant-based milk substitute, maple syrup, and vanilla. Beat with a whisk for several minutes until the batter thickens.
- In another bowl, beat the egg whites. Start gently using an electric mixer, add the cream of tartar, then beat at highest speed until stiff peaks form.
- Using a spatula, gently fold the egg whites into the batter. Again with the spatula, add the thin slices of apple.
- Pour the batter into the pan and bake on the center rack for about 40 minutes, or until an inserted toothpick comes out clean.
