Banana mug cake Recipe Gluten-free, dairy-free (casein-free) and vegan.

ORGANIC INGREDIENTS

  • 275 g (1 cup) ripe banana, smashed
  • 110 g (1/3 cup) honey
  • 65 g (1/3 cup) light olive oil
  • 60 g (1/3 cup) plant-based milk substitute*
  • 5 ml (1 tsp) vanilla
  • 15 ml (1 tbsp) chia seeds
  • 200 g (1 1/2 cup) all-purpose flour "La Merveilleuse"
  • 10 ml (2 tsp) baking powder
  • 5 ml (1 tsp) baking soda
  • 1 ml (1/4 tsp) salt
  • 90 g (1/2 cup) chocolat chips

PREPARATION

  1. In a bowl, combine the liquid ingredients and bananas. Set aside.
  2. In a coffee grinder, grind the chia seeds.D
  3. In a bowl, combine the ground chia and the dry ingredients that remain, except the chocolate chips.
  4. Add the dry mixture to the liquids and mix well with a spoon.
  5. Add the chocolate chips, blend well.
  6. Divide the batter into 4 cups. Heat each cup 2 minutes in the microwave oven. 
  7. Serve hot.
