Because of its exceptionally high mineral content, gluten-free buckwheat flour is a hidden gem! Buckwheat contains silica, magnesium, phosphorus, natural fluoride, potassium, zinc, etc. It is rich in protein and contains all essential amino acids, including lysine, which is absent from cereals.
