ORGANIC INGREDIENTS
- 210 g (1 1/2 cup) all-purpose flour "La Merveilleuse"
- 2,5 ml (1/2 tsp) baking soda
- 5 ml (1 tsp) baking powder
- 0,5 ml (1/8 tsp) ground cloves
- pinch of salt
- 100 g (1/2 cup) light olive oil
- 125 g (1/2 cup) plant-based milk substitute*
- 180 g (1/2 cup) molasses
- 1 large egg (55 g)
- 15 ml 1 (tbsp) fresh ginger, grated
- 300 g pears, peeled and cubed (about 3 cm)
PREPARATION
- Preheat the oven to 180 °C (350 °F).
- Oil and flour a round pan, 23 cm (9 in).
- In a bowl, combine the flour, baking soda, baking powder, cloves and salt.
- In a large bowl, combine the olive oil, the plant-based milk substitute, molasses, egg and fresh ginger. Beat with an electric mixer until foamy.
- Add the dry ingredients to the liquid and beat with the electric mixer until the batter thickens (about 1 minute). Next, delicately incorporate the pears with a spatula and mix well. Pour batter into the pan.
- Bake on the center rack for about 45 minutes, until an inserted toothpick comes out clean.

Delicious when still warm, served with homemade pear compote!
TIP
* If you are not on a dairy-free diet, replacing the plant-based drink with cow's milk is an option.
