ORGANIC INGREDIENTS

  • 210 g (1 1/2 cup) all-purpose flour "La Merveilleuse"
  • 2,5 ml (1/2 tsp) baking soda
  • 5 ml (1 tsp) baking powder
  • 0,5 ml (1/8 tsp) ground cloves
  • pinch of salt
  • 100 g (1/2 cup) light olive oil
  • 125 g (1/2 cup) plant-based milk substitute*
  • 180 g (1/2 cup) molasses
  • 1 large egg (55 g)
  • 15 ml 1 (tbsp) fresh ginger, grated
  • 300 g pears, peeled and cubed (about 3 cm)

PREPARATION

  1. Preheat the oven to 180 °C (350 °F).
  2. Oil and flour a round pan, 23 cm (9 in).
  3. In a bowl, combine the flour, baking soda, baking powder, cloves and salt.
  4. In a large bowl, combine the olive oil, the plant-based milk substitute, molasses, egg and fresh ginger. Beat with an electric mixer until foamy.
  5. Add the dry ingredients to the liquid and beat with the electric mixer until the batter thickens (about 1 minute). Next, delicately incorporate the pears with a spatula and mix well. Pour batter into the pan.
  6. Bake on the center rack for about 45 minutes, until an inserted toothpick comes out clean.

* If you are not on a dairy-free diet, replacing the plant-based drink with cow's milk is an option.
