ORGANIC INGREDIENTS

  • 140 g (1 cup) all-purpose flour "La Merveilleuse"
  • 5 ml (1 tsp) baking powder
  • Pinch of salt
  • 1 medium egg (45 g)
  • 50 g (1/4 cup) light olive oil
  • 165 g (2/3 cup) plant-based milk substitute*
  • 110 g (1/2 cup) cane sugar
  • 5 ml (1 tsp) vanilla extract

PREPARATION

  1. Preheat oven to 180 °C (350 °F).
  2. Grease a round 20 cm (8 in) cake pan. Line the bottom with parchment paper and sprinkle the edges with flour.
  3. In a bowl, combine flour, baking powder and salt.
  4. In a separate bowl, combine the egg, olive oil, milk substitute, sugar, and vanilla. Blend well with an electric mixer until frothy.
  5. Blend the dry ingredients into the liquids, with the electric mixer, and beat until thickened (about one minute).
  6. Transfer the batter to the pan and bake on the center rack for about 30 minutes, until an inserted toothpick comes out clean.
  7. Let cool 5 to 10 minutes before unmolding.
