ORGANIC INGREDIENTS
- 140 g (1 cup) all-purpose flour "La Merveilleuse"
- 5 ml (1 tsp) baking powder
- Pinch of salt
- 1 medium egg (45 g)
- 50 g (1/4 cup) light olive oil
- 165 g (2/3 cup) plant-based milk substitute*
- 110 g (1/2 cup) cane sugar
- 5 ml (1 tsp) vanilla extract
PREPARATION
- Preheat oven to 180 °C (350 °F).
- Grease a round 20 cm (8 in) cake pan. Line the bottom with parchment paper and sprinkle the edges with flour.
- In a bowl, combine flour, baking powder and salt.
- In a separate bowl, combine the egg, olive oil, milk substitute, sugar, and vanilla. Blend well with an electric mixer until frothy.
- Blend the dry ingredients into the liquids, with the electric mixer, and beat until thickened (about one minute).
- Transfer the batter to the pan and bake on the center rack for about 30 minutes, until an inserted toothpick comes out clean.
- Let cool 5 to 10 minutes before unmolding.

*If you are not following a lactose-free diet, using cow milk instead of a plant-based milk substitute is an option.
