Maple Taffy Chocolate Lollipops Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

ORGANIC INGREDIENTS
Preparing chocolate requires precision. Two tools are essential: a scale and a thermometer (ideally a digital thermometer).
- 60 g cocoa butter
- 5 ml (1 tsp) vanilla extract
- 30 g cocoa
- 160 g maple syrup
PREPARATION
- Melt the cocoa butter in a double boiler. Meanwhile, bring the maple syrup to a boil until it reaches 248 °F (120 °C).
- When the cocoa butter is melted, remove the double boiler from the heat. Add vanilla extract and cocoa and stir gently with a whisk.
- Add maple syrup and stir, still with a whisk, until smooth.
- Pour the mixture into the chocolate moulds.
- Leave to set in the refrigerator and remove from the mould.
- Store in an airtight container in the refrigerator.
