ORGANIC INGREDIENTS
- 245 g (1 3/4 cup) all-purpose flour "La Merveilleuse"
- 15 ml (1 tbsp) baking powder
- pinch of salt
- 2 medium eggs (90 g)
- 80 g (1/4 cup) maple syrup
- 250 g (1 cup) plant-based milk substitute*
- 100 g (1/2 cup) light olive oil
- 60 g (1/4 cup) unsweetened apple sauce
- 7,5 ml (1 1/2 tsp) vanilla
- 145 g (1 cup) dates, chopped
- 100 g (1 cup) walnuts, chopped
PREPARATION
- Preheat oven to 180 °C (350 °F).
- In a bowl, combine flour, baking powder and salt.
- In another bowl, combine eggs, maple syrup, plant-based milk substitute, olive oil, apple sauce and vanilla. Beat with an electric mixer until the batter is foamy.
- Incorporate the dry ingredients to the liquid mixture and beat again with the electric mixer, until the batter thickens (about 1-2 minutes). With a wooden spoon, add the dates and nuts.
- Transfer the batter to bread mold measuring 23 cm X 13 cm (9 X 5 in), greased and lined with parchment paper. (If you use smaller molds, the cooking time will be reduced.)
- Bake on the center rack 60-70 minutes, until an inserted toothpick comes out clean. Let rest for 5 minutes, then unmold to cool on a wire rack.

TIP
* If you are not on a dairy-free diet, replacing the plant-based drink with cow's milk is an option.

However, you really have to make sure you have good quality nuts because they oxidize quickly. It is therefore best to keep these nuts in the refrigerator or even in the freezer.
