Apple and maple caramelized pecan buns Recipe Gluten-free, dairy-free (casein-free),
hypotoxic and vegan

ORGANIC INGREDIENTS
Rolls:
- 30 ml (2 tbsp) chia
- 385 g (2 3/4 cups) all-purpose flour "La Merveilleuse"
- 5 ml (1 tsp) Instant yeast
- 3.5 ml (3/4 tsp) salt
- 385 g (1 2/3 cups) water at 45 °C (113 °F)
- 1 large egg (omit the egg for the vegan version)
- 30 ml (2 tbsp) light olive oil
- 30 ml (2 tbsp) maple syrup
- Oil (to oil a 12-muffin pan)
Apple and pecan filling:
- 80 g (1/4 cup) maple syrup
- 50 g (1/2 cup) pecans, chopped
- 2 apples, peeled and diced
- 3.5 ml (3/4 tsp) ground cinnamon
- 1 ml (1/4 tsp) ground nutmeg
PREPARATION
- Finely grind the chia in a coffee grinder.
- In a large bowl, mix together the ground chia, flour, baking powder and salt. Then add the water, egg, oil and maple syrup.
- Stir the mixture, either with an electric mixer or with a stand mixer with the flat beater, on medium speed, about 2 minutes.
- Cover the bowl with a damp cloth and let stand 45 minutes at room temperature.
- Meanwhile, prepare the apple and pecan filling as follows: cook all the ingredients in a pan and stir constantly, until the maple syrup caramelizes. Remove from the heat and let cool to room temperature.
- After the rest time, stir the dough well using a wooden spoon. Add the filling and mix everything well.
- Oil the muffin cups. Using an ice cream scoop dipped in water, drop the batter into the muffin cups. ( Dipping the spoon in water helps the dough slide smoothly into the molds).
- Place the buns in the oven on the central rack with the light on and let rise for 20 to 30 minutes. The dough will be ready to bake when a light pressure of the finger leaves an imprint (it no longer bounces when touched).
- Without removing the buns, set the oven to 180 °C (350 °F).
- Bake for about 50 to 55 minutes or until the buns are golden brown.
- Unmold them as soon as they take out of the oven and let them cool on a rack. If desired, brush the crust straight out of the oven with ghee (clarified butter) or dairy-free margarine.

These buns will make people happy for breakfast, as a snack or even served during a brunch.
