Amaretti Recipe Gluten-free, dairy-free (casein-free).

ORGANIC INGREDIENTS

  • 450 g (3 3/4 cups) almond flour
  • 180 g (3/4 cup) sugar
  • 1 pinch of salt
  • 4 egg whites (140 g)
  • 1 ml (1/4 tsp) vanilla extract
  • 10 ml (2 c. tsp) almond extract

PREPARATION

  1. Preheat oven to 325 °F.
  2. In a bowl, combine almond flour, sugar and salt. Set aside. 
  3. In another bowl, beat the egg whites until stiff peaks form. Add the vanilla and almond extracts, beat again. 
  4. Using a spatula, gradually incorporate the dry ingredients into the egg whites, folding gently. You will see the mixture turning into a sticky dough. 
  5. Using your hands, shape dough into 1 1/2"-diameter balls and place them onto a baking sheet lined with parchment paper. 
  6. Bake on the center rack for 20 minutes. 
  7. For a bit of color, set the oven to Broil and grill the amaretti for about 2 minutes. 
  8. Let cool completely and serve.
