Amaretti Recipe Gluten-free, dairy-free (casein-free).

ORGANIC INGREDIENTS
- 450 g (3 3/4 cups) almond flour
- 180 g (3/4 cup) sugar
- 1 pinch of salt
- 4 egg whites (140 g)
- 1 ml (1/4 tsp) vanilla extract
- 10 ml (2 c. tsp) almond extract
PREPARATION
- Preheat oven to 325 °F.
- In a bowl, combine almond flour, sugar and salt. Set aside.
- In another bowl, beat the egg whites until stiff peaks form. Add the vanilla and almond extracts, beat again.
- Using a spatula, gradually incorporate the dry ingredients into the egg whites, folding gently. You will see the mixture turning into a sticky dough.
- Using your hands, shape dough into 1 1/2"-diameter balls and place them onto a baking sheet lined with parchment paper.
- Bake on the center rack for 20 minutes.
- For a bit of color, set the oven to Broil and grill the amaretti for about 2 minutes.
- Let cool completely and serve.
