ORGANIC INGREDIENTS

  • 60 ml (4 c. tbsp) cocoa powder
  • 65 g (1/3 cup) light olive oil
  • 110 g (1/2 cup) maple syrup
  • 2 medium eggs (90 g)
  • 65 g (1/4 cup) plant-based milk substitute
  • 3,5 ml (3/4 tsp) almond extract
  • 5 ml (1 tsp) vanilla extract
  • 70 g (2/3 cup) sliced almonds
  • 225 g (1 2/3 cups) all-purpose flour "La Merveilleuse"
  • 10 ml (2 tsp) baking powder
  • pinch of salt

PREPARATION

  1. In a large bowl, combine the cocoa powder and oil. Add the maple syrup, eggs, milk substitute, almond extract, and vanilla extract. Stir well with a whisk.
  2. Finely grind the sliced almonds in a coffee grinder.
  3. In a bowl, combine ground almonds, flour, baking powder, and salt.
  4. Incorporate the dry ingredients into the batter and mix well with a wooden spoon.
  5. Cover and let rest in the refrigerator for 2-3 hours.
  6. Preheat the oven to 180 °C (350 °F).
  7. Drop spoonfuls of dough onto a cookie sheet lined with parchment paper. Flatten the cookies with a wet fork. Decorate, as desired, with sliced almonds.
  8. Bake using the upper grill, 12 minutes.
