Pretzels Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

YIELD : 22 PRETZELS*
ORGANIC INGREDIENTS
Dough:
- 60 ml (4 tbsp) flaxseed
- 30 ml (2 tbsp) chia seeds
- 385 g (2 3/4 cups) all-purpose flour "La Merveilleuse"
- 7.5 ml (1 1/2 tsp) instant yeast
- 3.5 ml (3/4 tsp) salt
- 360 g (1 1/2 cup) water at 45 °C (113 °F)
- 2 eggs, beaten
- 30 ml (2 tbsp) light olive oil
- 30 ml (2 tbsp) maple syrup or honey
- 1/4 cup (35 g) all-purpose flour "La Merveilleuse" (add after first rising)
- dairy-free margarine (or butter, if you do not follow a diet excluding dairy products), to baste directly out of the oven (optional)
Egg wash:
- Mix together a beaten egg and 15 ml (1 tbsp) water
Topping:
- Coarse salt, sesame seeds or hemp seeds, to taste
PREPARATION
- Finely grind the flax and chia in a coffee grinder.
- In a large bowl, mix together the flax and chia, flour, baking powder and salt. Then add the water, eggs, oil and maple syrup (or honey).
- Stir the mixture with an electric mixer or in a stand mixer with the flat beater on medium speed, about 2 minutes.
- Cover the bowl with a damp cloth and let stand in the oven with the light on for 60 minutes. After this rising time, stir the dough well using a wooden spoon.
- Add 35 g (1/4 cup) of La Merveilleuse All Purpose Flour to the batter and mix well.
- Place the dough on a floured surface and knead it very lightly, just to make it less sticky on the outside (a gluten-free dough always stays wetter on the inside).
- Divide it into 22 equal parts (about 45 g). With floured hands, shape each part into a ball. Let stand 5 minutes.
- Shape each ball into a roll about 25 to 30 cm (10 to 12 inches) long.
- Give the shape of a pretzel.
- Place pretzels on a baking sheet lined with oiled parchment paper.
- Brush each pretzel with the egg wash, then sprinkle with the desired topping.
- Cover with a dry cloth and let stand at room temperature for 20 minutes.
- Preheat the oven to 180 °C (350 °F), placing inside the oven a bowl containing 500 ml (2 cups) of hot water; this will help create some moisture for cooking.
- After standing time, bake on the center rack for about 30 to 35 minutes or until the pretzels are golden brown.
- Remove from oven, brush with margarine (or butter) and let cool on a rack.
These homemade pretzels will appeal to young and old and will add a festive and special touch!
TIP
If your baking sheet cannot contain all of the pretzels, do not shape the extra balls. Simply cover them with a dry cloth and shape them when there is about 15 minutes left in the cooking of your first pretzels. It will then suffice to lightly knead the balls before shaping, since they will have continued to develop.
* We offer 22 pretzels, but you can also choose to make them bigger or smaller, which will affect the final yield.
