Cinnamon maple sugar cookies Recipe Gluten-free, dairy-free (casein-free) and vegetarian.

ORGANIC INGREDIENTS
Cookies:
- 280 g (2 cups) all-purpose flour "La Merveilleuse"
- 10 ml (2 tsp) baking powder
- 1 ml (1/4 tsp) salt
- 100 g (1/2 cup) light olive oil
- 155 g (2/3 cup) cane sugar
- 2 large eggs (110 g)
- 5 ml (1 tsp) vanilla extract
Topping:
- 30 g (1/4 cup) maple sugar
- 10 ml (2 tsp) ground cinnamon
- Almonds for decorating
PREPARATION
- In a small bowl, combine flour, baking powder, and salt. Set aside.
- In a large bowl, combine oil, sugar, eggs, and vanilla. Stir vigorously with a whisk.
- Mix the dry ingredients into the liquids, stirring thoroughly with a wooden spoon.
- Cover the dough. Let rest in the refrigerator for a minimum of 3 hours.
- Preheat the oven to 180 °C (350 °F).
- In a small bowl, combine the maple sugar and cinnamon.
- Shape the dough into 20 balls, then roll each ball in the cinnamon sugar mixture.
- Place the balls on a baking sheet lined with parchment paper. Slightly flatten with the back of a spoon. Press an almond lightly in the center of each cookie.
- Bake on the center rack for about 15 minutes or until the cookies are golden.
- Remove the cookies delicately with a spatula and cool on a wire rack.
