ORGANIC INGREDIENTS

Cookies:

  • 280 g (2 cups) all-purpose flour "La Merveilleuse"
  • 10 ml (2 tsp) baking powder
  • 1 ml (1/4 tsp) salt
  • 100 g (1/2 cup) light olive oil
  • 155 g (2/3 cup) cane sugar
  • 2 large eggs (110 g)
  • 5 ml (1 tsp) vanilla extract

Topping:

  • 30 g (1/4 cup) maple sugar
  • 10 ml (2 tsp) ground cinnamon
  • Almonds for decorating

PREPARATION

  1. In a small bowl, combine flour, baking powder, and salt. Set aside.
  2. In a large bowl, combine oil, sugar, eggs, and vanilla. Stir vigorously with a whisk. 
  3. Mix the dry ingredients into the liquids, stirring thoroughly with a wooden spoon.
  4. Cover the dough. Let rest in the refrigerator for a minimum of 3 hours.
  5. Preheat the oven to 180 °C (350 °F).
  6. In a small bowl, combine the maple sugar and cinnamon.
  7. Shape the dough into 20 balls, then roll each ball in the cinnamon sugar mixture.
  8. Place the balls on a baking sheet lined with parchment paper. Slightly flatten with the back of a spoon. Press an almond lightly in the center of each cookie.
  9. Bake on the center rack for about 15 minutes or until the cookies are golden.
  10. Remove the cookies delicately with a spatula and cool on a wire rack.
