Chocolate Mousse Recipe Gluten-free, dairy-free (casein-free), hypotoxic and vegan

INGREDIENTS

  • 20 g (1/4 cup) cocoa
  • 35 g (1/3 cup) maple flakes*
  • 50g dark chocolate, 70% chopped
  • 30 ml (2 tbsp) maple syrup
  • 30 ml (2 tbsp) light olive oil
  • 1 packet (340 grams) of silky firm tofu**
  • 7.5 ml (1 1/2 tsps) vanilla extract

PREPARATION

  1. Combine cocoa, maple flakes, dark chocolate, maple syrup and olive oil in the upper part of the double boiler. Melt gently and remove from heat as soon as the chocolate is melted. There will be a few pieces of maple flakes that will not have melted, and that is normal.
  2. Put tofu, vanilla extract and melted chocolate mixture into a blender.
  3. Mix well, pour into cups and refrigerate.

* and ** You can use comparable products with success. For my part, I used:

I use the firm silky tofu for the creamy texture it gives to this mousse. Pay attention to this detail, as soft silky tofu will not give such a creamy result.
