ORGANIC INGREDIENTS

  • 4 egg whites (about 100 g)
  • 240 g (3/4 cup) maple syrup

PREPARATION

  1. Bring the syrup to a boil until it reaches a temperature of 116 °C (240 °F).
  2. While the syrup is boiling, beat the egg whites until stiff peaks form.
  3. Slowly pour the hot syrup over the egg whites and continue beating to obtain a smooth foam.
  4. Pour into dessert cups and garnish with fruit, to taste.
