ORGANIC INGREDIENTS
- 4 egg whites (about 100 g)
- 240 g (3/4 cup) maple syrup
PREPARATION
- Bring the syrup to a boil until it reaches a temperature of 116 °C (240 °F).
- While the syrup is boiling, beat the egg whites until stiff peaks form.
- Slowly pour the hot syrup over the egg whites and continue beating to obtain a smooth foam.
- Pour into dessert cups and garnish with fruit, to taste.
This maple mousse will be delicious served with berries or as an accompaniment to a cake.
