Maple Taffy on Snow and Maple Butter Recipe Gluten-free, dairy-free (casein-free),
hypotoxic and vegan

ORGANIC INGREDIENTS

  • 1 cane of maple syrup (540 ml)
  • 1 bucket filled of packed snow
  • 1 small dish filled with snow to check the cooking of the taffy
  • Wooden popsicle sticks

PREPARATION

  1. In a large pot, bring maple syrup to a boil. Simmer gently to prevent the syrup from overflowing.
  2. You can use a thermometer for the temperature of the taffy: about 112 degrees Celsius (235 °F).
  3. For my part, I just use my little dish filled with snow to check everything! When the liquid has thickened, I drizzle a little on the snow to see if the taffy is ready! If it's too liquid, just boil a little more and there you go! It's done!
  4. Now is the time to gently pour, with the help of a ladle, some liquid on the snow, wait for it to freeze and enjoy. A sweet moment to share with your family!

When winter is coming to an end, remember to keep snow in the freezer for a day out of the ordinary in the middle of summer. Children will be amazed to relive the joys of Sugaring, even in summer!

VARIATION

MAPLE BUTTER:

One of my children's great joys is to make their own maple butter, as I did as a child myself at Grandpa Antoine's sugar shack!

I often boil a little more maple syrup and when we’ve all had enough, I put what is left of the taffy in a small bowl. The children stir with a spoon until the taffy turns into maple butter. Don't stir too much, because when it's cool, you may have made maple sugar! But butter or sugar... The result is always as delicious!
