ORGANIC INGREDIENTS

Sauce:

  • 240 g (1 cup) water
  • 210 g (2/3 cup) maple syrup
  • 1 tbsp (15 ml) light olive oil*

Batter:

  • 2 medium eggs (90 g)
  • 30 ml (2 tbsp) light olive oil
  • 45 ml (3 tbsp) maple syrup
  • 125 g (1/2 cup) plant-based milk substitute**
  • 5 ml (1 tsp) vanilla extract
  • 175 g (1 1/4 cup) all-purpose flour "La Merveilleuse"
  • 7,5 ml (1 1/2 tsp) baking powder
  • Pinch of salt
  • 50 g (1/2 cup) walnuts, finely chopped

PREPARATION

  1. Preheat the oven to 180 °C (350 °F). Grease a baking pan  20 cm X 20 cm (8 in X 8 in).
  2. Bring to a boil the water, maple syrup and olive oil.
  3. In a bowl, combine eggs, olive oil, maple syrup, milk substitute and vanilla. Beat on high speed with the electric mixer for about 1 minute, until the mixture is foamy.
  4. Combine the flour, baking powder and salt. Add to the liquid mixture and beat on high speed for 1 minute until thickened.
  5. Spread the batter evenly in the pan, then pour the boiling syrup on top.
  6. Sprinkle with walnuts.
  7. Bake on the middle rack for 45 to 50 minutes, until the pudding is golden.
  8. Cool 15 minutes before serving.

VARIATION

The walnuts on top could also be replaced with finely chopped pecans. Or, you could simply sprinkle the top with unsweetened shredded coconut, an equally tasty version!

* Light olive oil: This term is used to refer to an oil that is delicate in taste, because there are several kinds of oils on the market and some are very tasty and lend themselves better to salad dressings than to baking. The terms “light”, “subtle taste” or “delicate oil” could be keywords to search for when buying an olive oil with a less pronounced taste, which really lends itself more to pastries.

** If you're not on a dairy-free diet, replacing the plant-based drink with cow's milk is an option.
