Pretzel bites Recipe Gluten-free, dairy-free (casein-free).

ORGANIC INGREDIENTS
- 1 recipe for basic bread
- 65 g (1/4 cup) baking soda
- Kosher salt
- Sesame seeds
PREPARATION
- Prepare the basic bread recipe according to instructions.
- Do the first rise in the oven, for 60 minutes and light on. After rising, stir the dough with a wooden spoon.
- Add 35 g (1/4 cup) all-purpose flour La Merveilleuse to the dough and combine well.
- Place the dough on a floured surface and knead gently until it is less sticky on the outside (gluten-free dough always remains moist on the inside). Divide it into 7 equal parts.
- With floured hands, roll each ball to create long strips about 2.5 cm in diameter.
- Cut each strip into approximately 3 cm sections.
- Preheat the oven to 180 °C (350 °F).
- In a large pot, boil water and add baking soda.
- Once the water boils, using a slotted spoon, drop the pieces of dough into it. Do not put too much at once to prevent the pieces from touching and sticking together.
Leave them for 30 seconds, then place them on a baking sheet lined with oiled parchment paper. - Sprinkle the bites with kosher salt and sesame seeds, and bake for 8 to 10 minutes or until toasted.
- Once cooked, place on a plate and let cool.
- Serve with a mayonnaise, mustard and maple syrup sauce.
