ORGANIC INGREDIENTS
- 20 g (30 ml / 2 tbsp) chia*
- 385 g (2 3/4 cups) all-purpose flour "La Merveilleuse"
- 3,5 ml (3/4 tsp) salt
- 1 ml (1/4 tsp) instant yeast
- 385 g (1 1/2 cups + 2 tbsp) water at the exact temperature required for your machine model See settings
- 30 ml (2 tbsp) light olive oil
- 30 ml (2 tbsp) maple syrup
- 1 large egg, beaten (see eggless version below)
- 15 ml (1 tbsp) lemon zest
- 160 g (1 cup) dried cranberries, roughly chopped
- 85 g (1/2 cup) grilled hazelnuts**, roughly chopped
PREPARATION
You will maximize your chances of success by using the gram measurements given in the recipe.
- Using a coffee grinder, finely grind the chia.
- In a medium bowl, blend the dry ingredients: ground chia, flour, salt, and yeast. Set aside.
- Check that the kneading blade is properly inserted inside the machine. Add the liquid ingredients as well as the lemon zest in the order listed above.
- Add the dry ingredients, then start the machine on the chosen cycle, according to the make and model of your machine. See settings
- Wait about 2 hours, then open the lid to scrape down the sides with a spatula for all the flour to blend into the dough.
- Close the lid and let the machine continue the cycle until you hear the signal for adding ingredients. Open the lid, add the cranberries and hazelnuts, then close again to let the cycle finish. Note : the signal for adding ingredients is different in every machine. Check your user's manual to know the exact timing.
- As soon as the cycle has ended, remove the bread (do not leave on the keep warm function). Unmold the bread and let cool on a wire rack. Wait until the bread has cooled completely before removing the kneading blade.

TIP
* If you use chia seeds that are already commercially ground, the grind is not thin enough and the density is not the same for whole seeds and ground seeds. It is therefore essential to use the measurement in grams and grind your seeds again in a coffee grinder in order to obtain a fine powder.
** If you wish to grill the hazelnuts, here's how:
This step is optional. However, grilling the hazelnuts brings out their flavor and diminishes the slight bitterness of the skin.
Place the hazelnuts on a baking sheet and roast on the middle rack of the oven that's been preheated to 120 °C (250 °F) for 30 minutes. Let cool then remove skin.
VARIATION
EGG-FREE VERSION (VEGAN)
- Simply double the amount of oil without changing any other ingredients.
