Pear compote Recipe Gluten-free, dairy-free (casein-free) and vegan.

PORTIONS: 3 CUPS ( 1 litre)



ORGANIC INGREDIENTS

  • 12 ripe pears, peeled and sliced
  • 125 ml (1/2 cup) water
  • Juice from 1/2 lemon
  • 2,5 ml (1/2 tsp) powdered agar agar

PREPARATION

  1. In a large pan, place the pears, water, and lemon juice.
  2. Bring to a boil, cover, and cook on low heat for 15 minutes, stirring every 5 minutes.
  3. Remove the lid and let simmer for 10 minutes more, stirring frequently.
  4. Add the agar agar, mix well, cook for another 2 minutes.
  5. Puree in a food processor or smash with a pestle for a chunkier compote.
  6. Store in the refrigerator in an airtight container.

TIP

If you have a bread machine that has a jam function, simply place all the ingredients except the water in the container (as this cooking method does not require water) and start the cycle. You will only have to puree in the blender once the cycle is finished.
