Apricot jam Recipe Gluten-free, dairy-free (casein-free) and vegan.

PORTIONS: 2 SMALL JARS
ORGANIC INGREDIENTS
- 390 g (3 cups) apricots in light syrup, drained
- 80 g (1/4 cup) maple syrup
- 1,25 ml (1/4 tsp) powdered agar-agar
PREPARATION
- In a small saucepan, combine all the ingredients.
- Bring to a boil. Simmer for 15 minutes, stirring frequently.
- During cooking, using a fork, break up pieces of apricot little by little.
- When finished cooking, to have a smoother jam, grind the mixture with a potato ricer.
- Pour the jam into the little jars and refrigerate. Note that the jam will thicken during refrigeration.
This jam is easy and quick to make. It will add a splash of sunshine to whatever you add it to.
