ORGANIC INGREDIENTS

  • 210 g (1 1/2 cup) all-purpose flour "La Merveilleuse"
  • 30 g (1/3 cup) quinoa flakes
  • 5 ml (1 tsp) baking powder
  • Pinch of salt
  • 100 g (1/2 cup) light olive oil
  • 120 g (1/2 cup) honey
  • 140 g (1/2 cup) almond butter
  • 1 medium egg (45 g)
  • 5 ml (1 tsp) vanilla extract
  • 1 ml (1/4 tsp) almond extract
  • Almonds for decorating

PREPARATION

  1. In a bowl, combine the flour, quinoa flakes, baking powder, and salt.
  2. In a separate bowl, combine the oil, honey, almond butter, egg, vanilla, and almond extract. Whisk vigorously. 
  3. Incorporate the dry ingredients into the liquids and mix well.
  4. Cover the dough and refrigerate for 1 hour.
  5. Preheat the oven to 180 °C (350 °F).
  6. Make 20 balls of dough. Bake on a baking sheet covered with parchment paper. Flatten each ball with a fork to make a cookie of about 5 cm (2 in) in diameter. Decorate with an almond.
  7. Bake on the center rack for 15 minutes, until golden.
  8. Using a spatula, delicately transfer the cookies to a cooling rack.
