S'mores Cookies Recipe Gluten-free, dairy-free (casein-free).

ORGANIC INGREDIENTS
- 330 g (2 cups) all-purpose flour "La Merveilleuse"
- 3,5 ml (3/4 tsp) baking soda
- 1 ml (1/4 tsp) salt
- 220 g (1 cup) melted margarine*
- 95 g (1/2 cup) brown sugar
- 120 g (1/2 cup) granulated sugar
- 2 large eggs (110 g)
- 5 ml (1 tsp) vanilla extract
- 35 g (3/4 cup) mini marshmallows
- 75 g (1/2 cup) semisweet chocolate chips

- Mini marshmallows
- Semisweet chocolate chips
PREPARATION
- In a bowl, combine flour, baking soda and salt. Set aside.
- In another bowl, using an electric mixer, beat together the melted margarine, brown sugar and granulated sugar. Add the eggs and vanilla and beat again for about 1 minute.
- Add the dry ingredients to the mixture and beat again on low with the electric mixer.
- Add the chocolate chips and marshmallows and stir with a wooden spoon.
- Cover the dough and let rest in the refrigerator for at least 1 1/2 hours.
- Preheat the oven to 190 °C (375 °F).
- Line a baking sheet with parchment paper.
- Using two spoons, shape dough into balls and place them on the baking sheet.
- Bake on the middle rack for about 12 minutes.
- Immediately after removing from the oven, decorate the hot cookies with halved mini marshmallows and chocolate chips.
- Use a spatula to transfer the cookies to a rack to cool.
These mouth-watering flavors combined in a single cookie, the taste of s'mores that are traditionally enjoyed in front of a camp fire!
They're called s'mores because you'll always ask for "some more!" No one can eat only one!
TIP
* If you are not on a dairy-free diet, replacing margarine with butter is an option.
