Apple and Buckwheat Waffles Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

ORGANIC INGREDIENTS
- 140 g (1 cup) buckwheat flour
- 140 g (1 cup) all-purpose flour "La Merveilleuse"
- 15 ml (1 tbsp) baking powder
- 5 ml (1 tsp) ground cinnamon
- 2.5 ml (1/2 tsp) ground nutmeg
- A pinch of salt
- 3 medium eggs, separated
- 250 g (1 cup) plant-based milk substitute
- 50 g (1/4 cup) light olive oil
- 2 apples, cubed (about 230 g)
- 5 ml (1 tsp) vanilla extract
PREPARATION
- In a bowl, combine all-purpose flour, buckwheat flour, baking powder, ground cinnamon, nutmeg and salt. Add egg yolks, plant-based milk substitute, oil and vanilla and beat at maximum speed with an electric mixer until mixture thickens (about 1 minute).
- Beat the egg whites until stiff peaks form.
- Using a spatula, fold the egg whites into the batter.
- Still using a spatula, stir in the apples.
- Let rest for 5 to 10 minutes.
- Pour part of the batter on the waffle maker, preheated and brushed with oil, spread slightly if necessary and cook, until golden brown.
- Between batches, to obtain good crispy waffles, lightly brush the baking surface of the waffle maker with oil.
Apples and buckwheat go very well together. These waffles also make great snacks. You can even add nuts to increase the nutritional value.
