ORGANIC INGREDIENTS

  • 35 g (1/4 cup) flaxseed
  • 280 g (2 cups) all-purpose flour "La Merveilleuse"
  • 90 g (1 cup) quinoa flakes
  • 15 ml (1 tbsp) baking powder
  • pinch of salt
  • 2 medium eggs (90 g)
  • 65 g (1/3 cup) light olive oil
  • 260 g (1 cup) ripe bananas *, mashed
  • 415 g (1 3/4 cups) plant-based milk substitute
  • 5 ml (1 tsp) vanilla
  • 50 g (1/2 cup) pecans, finely chopped

PREPARATION

  1. Finely grind the flax seeds in a coffee grinder. In a bowl, combine flour, ground flax, quinoa flakes, baking powder and salt.
  2. In another bowl, using an electric mixer, beat together the eggs, oil, mashed bananas, plant-based milk substitute, and vanilla until fluffy.
  3. Add the flour mixture and stir with a whisk to obtain a uniform batter**.
  4. With a spoon, mix in the pecans.
  5. Let rest for five minutes.
  6. Place part of the batter on the pre-heated and oiled waffle iron. Spread slightly if necessary and cook until golden brown.
  7. After each waffle, to obtain a nice, crispy exterior, lightly brush the cooking surface of the waffle maker with oil.

TIP

* In order to really taste the bananas, they must be very ripe.

** For this recipe, it is very important not to use the electric mixer when adding the dry ingredients, as the batter will become too thick.
