Banana pecan waffles Recipe Gluten-free, dairy-free (casein-free) and hypotoxic.

ORGANIC INGREDIENTS
- 35 g (1/4 cup) flaxseed
- 280 g (2 cups) all-purpose flour "La Merveilleuse"
- 90 g (1 cup) quinoa flakes
- 15 ml (1 tbsp) baking powder
- pinch of salt
- 2 medium eggs (90 g)
- 65 g (1/3 cup) light olive oil
- 260 g (1 cup) ripe bananas *, mashed
- 415 g (1 3/4 cups) plant-based milk substitute
- 5 ml (1 tsp) vanilla
- 50 g (1/2 cup) pecans, finely chopped
PREPARATION
- Finely grind the flax seeds in a coffee grinder. In a bowl, combine flour, ground flax, quinoa flakes, baking powder and salt.
- In another bowl, using an electric mixer, beat together the eggs, oil, mashed bananas, plant-based milk substitute, and vanilla until fluffy.
- Add the flour mixture and stir with a whisk to obtain a uniform batter**.
- With a spoon, mix in the pecans.
- Let rest for five minutes.
- Place part of the batter on the pre-heated and oiled waffle iron. Spread slightly if necessary and cook until golden brown.
- After each waffle, to obtain a nice, crispy exterior, lightly brush the cooking surface of the waffle maker with oil.
You will enjoy these waffles as much for breakfast, as a snack or even as a dessert! Plus, they're a great source of omega-3s, with 1 gram per serving!
TIP
* In order to really taste the bananas, they must be very ripe.
** For this recipe, it is very important not to use the electric mixer when adding the dry ingredients, as the batter will become too thick.
