Lemon waffles Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

ORGANIC INGREDIENTS
- 280 g (2 cups) all-purpose flour "La Merveilleuse"
- 10 ml (2 tsp) baking powder
- 1 ml (1/4 tsp) salt
- 80 g (1/4 cup) maple syrup
- 50 g (1/4 cup) light olive oil
- 2 large eggs, separated
- 250 g (1 cup) plant-based milk substitute* of your choice
- 5 ml (1 tsp) vanilla extract
- 30 ml (2 tbsp) lemon juice
- 22,5 ml (1 1/2 tbsp) lemon zest
*If you are not on a dairy-free diet, using cow's milk is an option.
PREPARATION
- In a bowl, combine flour, baking powder and salt. Add the maple syrup, olive oil, egg yolks, plant-based milk substitute, vanilla, lemon juice and lemon zest. Beat with an electric mixer at medium speed until the batter thickens (about 1 minute).
- Beat the egg whites until firm.
- With a spatula, gently fold the egg whites into the batter.
- Let rest for 10 to 15 minutes.
- Place some batter on the preheated and greased waffle iron, spreading as needed. Cook until golden.
- Re-grease the waffle iron before putting batter to get nice and crispy waffles.
