Lemon waffles Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

ORGANIC INGREDIENTS

  • 280 g (2 cups) all-purpose flour "La Merveilleuse"
  • 10 ml (2 tsp) baking powder
  • 1 ml (1/4 tsp) salt
  • 80 g (1/4 cup) maple syrup
  • 50 g (1/4 cup) light olive oil
  • 2 large eggs, separated
  • 250 g (1 cup) plant-based milk substitute* of your choice
  • 5 ml (1 tsp) vanilla extract
  • 30 ml (2 tbsp) lemon juice
  • 22,5 ml (1 1/2 tbsp) lemon zest

*If you are not on a dairy-free diet, using cow's milk is an option.


PREPARATION

  1. In a bowl, combine flour, baking powder and salt. Add the maple syrup, olive oil, egg yolks, plant-based milk substitute, vanilla, lemon juice and lemon zest. Beat with an electric mixer at medium speed until the batter thickens (about 1 minute).
  2. Beat the egg whites until firm.
  3. With a spatula, gently fold the egg whites into the batter.
  4. Let rest for 10 to 15 minutes.
  5. Place some batter on the preheated and greased waffle iron, spreading as needed. Cook until golden.
  6. Re-grease the waffle iron before putting batter to get nice and crispy waffles.
