ORGANIC INGREDIENTS

  • 210 g (1 1/2 cup) all-purpose flour "La Merveilleuse"
  • 45 g (1/3 cup) hemp seeds
  • 30 g (1/3 cup) quinoa flakes
  • 10 ml (2 tsp) baking powder
  • 1 ml (1/4 tsp) salt
  • 3 large eggs (165 g)
  • 250 g (1 cup) plant-based milk substitute, to taste
  • 50 g (1/4 cup) light olive oil
  • 30 ml (2 tbsp) maple syrup
  • 10 ml (2 tsp) vanilla extract
  • 170 g (1 1/2 cup) raspberries, fresh or frozen

PREPARATION

  1. In a large bowl, mix together the flour, hemp seeds, quinoa flakes, baking powder and salt.
  2. Add the eggs, plant-based milk substitute, oil, maple syrup and vanilla extract. Beat with an electric mixer until the batter thickens (about 1 minute). Let rest 5 minutes.
  3. Using a wooden spoon, incorporate the raspberries into the batter, mixing gently.
  4. Place the batter on the pre-heated and oiled waffle iron. Spread lightly as needed and bake until golden brown.
  5. To obtain nice, crispy waffles, lightly brush the cooking surface of the waffle maker with oil between each cooking.

VARIATION

You can also replace the raspberries with blueberries or, for mixed-berry waffles, put half raspberries and half blueberries.
