Chocolate banana waffles Recipe Gluten-free and dairy-free (casein-free).

ORGANIC INGREDIENTS
- 45 ml (3 tbsp) flaxseed
- 215 g (1 1/2 cups) all-purpose flour "La Merveilleuse"
- 50 g (1/2 cup) cocoa
- 15 ml (1 tbsp) baking powder
- 1 ml (1/4 tsp) salt
- 260 g (1 cup) ripe bananas, crushed
- 3 large eggs (165 g)
- 185 g (3/4 cup) plant-based milk substitute*
- 65 g (1/3 cup) light olive oil
- 60 ml (1/4 cup) maple syrup
- 10 ml (2 tsp) vanilla extract
PREPARATION
- Finely grind the flaxseed in a coffee grinder.**
- In a medium-sized bowl, combine the ground flaxseed, flour, cocoa, baking powder and salt. Set aside.
- In the bowl of a stand mixer, combine the bananas, eggs, milk substitute, olive oil, maple syrup, and vanilla. Beat until foamy.
- Add the dry ingredients to the batter and beat in the stand mixer until thickened, about 1 minute.
- Place some batter onto an oiled, heated waffle iron. Cook. To get a crispy exterior, lightly brush the waffle iron with some oil for each waffle.

TIP
* If you are not on a dairy-free diet, replacing the plant-based drink with cow's milk is an option.
** If you use flaxseeds that are already commercially ground, the grind is not thin enough and the density is not the same for whole seeds and ground seeds. It is therefore essential to use the measurement in grams and grind your seeds again in a coffee grinder in order to obtain a fine powder.
