ORGANIC INGREDIENTS

  • 8 medium-size eggs
  • 125 g (1/2 cup) plant-based milk substitute*
  • 5 slices cooked bacon, cut into small pieces
  • 36 g (1/4  cup) red pepper, minced
  • 20 g (1/4  cup) mushrooms, minced
  • 20 g (1/4  cup) broccoli, minced
  • 6 g (2 tbsp) chopped spinach
  • 6 g (2 tbsp) green onions, minced
  • 15 ml (1 tbsp) maple syrup
  • Salt/pepper, to taste

PREPARATION

  1. Preheat the oven to 190 °C (375 °F).
  2. Blend all ingredients in a bowl.
  3. Grease the inside of a 10-muffin pan and fill with the batter.
  4. Cook on the center rack for 15 minutes or until the egg bites have risen and are golden.
  5. Wait a few minutes before unmolding, then serve.
