ORGANIC INGREDIENTS
- 1 kg (2.2 lb) salmon fillet, skin removed
- 1 small red onion, finely chopped
- 30 ml (2 tbsp) Olive oil
- 80 g (1/4 cup) maple syrup
- 1 red pepper, cut into small cubes
- 2 apples, peeled and cut into small cubes
- 2 pears, peeled and cut into small cubes
- The juice of half a lime, freshly squeezed
- 10 g (1/3 cup) fresh cilantro, chopped
- 30 ml (2 tbsp) Fresh mint
- 3/4 teaspoon (3.5 ml) salt
- Pepper, to taste
PREPARATION
- Preheat the oven to 110 °C (230 °F).
- Place salmon on a baking sheet lined with parchment paper.
- In a skillet, sauté the onion in olive oil over low heat for 3 to 4 minutes. Then add the maple syrup and cook, still over low heat, until the syrup caramelizes (about 5 minutes).
- Add the peppers, apples, pears and lime juice and reduce the broth to half. Stir in the herbs and salt and cook for an additional 1 minute.
- Distribute this mixture over the salmon and put in the oven on the central rack.
- Cook for about 60 minutes, or until the flesh of the salmon flakes with a fork. Cooking time will vary depending on the thickness of the fillet.
- Pepper to taste, if desired, when serving.
