ORGANIC INGREDIENTS

  • 1 clove garlic, finely minced
  • 1/2 red onion, chopped
  • 453 g (1 lb) ground beef or pork
  • 1 apple, diced finely
  • 3 kale leaves, chopped
  • 3 mushrooms, cubed
  • 1 tomato, chopped
  • 30 g (1/3 cup) gluten-free breadcrumbs
  • 30 g (1/4 cup) dried cranberries
  • 5 ml (1 tsp) dried parsley
  • 0,5 ml (1/8 tsp) ground cloves
  • 0,5 ml (1/8 tsp) nutmeg
  • Salt/pepper, to taste
  • 4 bell peppers

PREPARATION

  1. Heat 1 tablespoon of oil in a saucepan over medium heat. Brown onions and garlic for about 3 minutes.
  2. Add the ground meat and cook until no longer pinkish in color.
  3. Add the apples, kale and mushrooms. Continue sauteing, stirring periodically, for 5 minutes. 
  4. Lastly, add the tomato, breadcrumbs, cranberries, and spices. Mix well. Set aside.
  5. Preheat the oven to 180 °C (350 °F).
  6. Cut off the tops of the bell peppers. 
    Remove the seeds and center from each pepper.
  7. Go ahead and carve shapes or faces in the peppers. Anything you fancy!
  8. Stuff your decorated peppers with the meat mixture.
  9. On a baking tray lined with parchment paper, bake the peppers with their tops on for 20 minutes.
