The plant of Archangel Raphael
Angelica Archangelica is also known as Garden Angelica or the “Root of the Holy Ghost.”
In mythology, Angelica was thought to be under the protection of Michael the Archangel because it blooms on his name day, May 8th of the former Julian calendar. Common belief says it was the archangel Raphael – “He who heals” – who made the virtues of this plant known to the world.
Caroline Roy, co-founder of Cuisine L’Angélique, named the bakehouse after this illustrious plant, in memory of Raphaël, her son who passed away at the age of 21 months, as a perfect illustration of the maxim: “There are no accidents in life, only important encounters.”
Angelica is native to North and Northeast Europe, Russia, Iceland, Greenland and the Himalayas.
It usually grows near rivers that meander through mountainous regions. This plant is fully edible, stalks, leaves and roots included.
Its stalks may be candied to create the green confectionery commonly used to decorate cakes. Some boil its roots and leaves in milk and eat its berries in light syrup. Leaf stalks can be blanched and eaten like celery.
The flowers, of a beautiful lavender to dark pink colour, give off a liquorice flavour.
The leaves also make good herbal teas. Tonifying, purifying and stimulating digestion, Angelica also has good medicinal virtues. It is even thought to contribute to relaxation. The roots and seeds of Angelica are used to flavour liqueurs such as Bénédictine and Chartreuse.
Angelica decoction is also used to tone the face and relieve tired eyes.
