ORGANIC INGREDIENTS

Requires oven-proof pan, 25 cm (10 in.) in diameter

Dough:

  • 30 ml (2 tbsp) chia
  • 210 g (1 1/2 cup) all-purpose flour "La Merveilleuse"
  • 10 ml (2 tsp) baking powder
  • 2,5 ml (1/2 tsp) dried oregano
  • 2,5 ml (1/2 tsp) dried basil
  • 1 ml (1/4 tsp) salt
  • 125 g (1/2 cup) non-dairy milk substitute*
  • 1 large egg (55 g)
  • 30 ml (2 tbsp) olive oil
  • 15 ml (1 tbsp) maple syrup
  • 30 ml (2 tbsp) melted margarine

Sauce:

  • 165 g (2/3 cup) tomato sauce
  • 2,5 ml (1/2 tsp) dried oregano
  • 2,5 ml (1/2 tsp) dried basil
  • 1 ml (1/4 tsp) garlic powder
  • Salt and pepper, to taste

Vegetables:

  • 30 ml (2 tbsp) olive oil
  • 1 small red onion, finely sliced
  • 1/2 zucchini, cut in half lengthwise, then sliced
  • 1/2 yellow bell pepper, cut into thin rings
  • 114 g (4 oz) white mushrooms, chopped
  • Cherry tomatoes, cut as preferred
  • 55 g (1/2 cup) sliced black olives
  • Black and white sesame seeds

PREPARATION

Dough:

  1. Using a coffee grinder, finely grind the chia.
  2. In a medium bowl, combine ground chia, flour, baking powder, oregano, oregano, basil, and salt.
  3. Add the milk substitute, egg, oil, and maple syrup. Mix well with a wooden spoon until dough forms a ball. Cover with a dry dishcloth and let rest at room temperature for 15 minutes.
  4. Preheat the oven to 200 °C (400 °F).
  5. Grease the pan with the melted margarine.
  6. Using your hands, spread the dough in the pan, also going up the sides. The dough will be sticky, so simply moisten your hands for easier spreading. Cook on the middle rack for 8 minutes.

Sauce:

  1. In a bowl, combine all the sauce ingredients. Set aside.

Pizza:

  1. In a frying pan, heat oil. Cook onion, zucchini, bell pepper, and mushrooms for 5 minutes.
  2. Add the tomatoes and cook another 3 minutes.
  3. Spread the sauce on the dough (after the 8 minutes of pre-cooking).
  4. Spread the vegetables and olives on top of the sauce. Sprinkle with sesame seeds, to taste.
  5. Cook on the middle rack for 8 minutes or until the crust is cooked. Switch cooking mode to broil and cook a few minutes more, just enough to finish cooking the vegetables. Remove from oven.
