Armenian-inspired Angelic Pizza Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

ORGANIC INGREDIENTS
Pizza dough:
Garnish:
- 1/2 lb (227 g) ground lamb or lean ground beef
- Half of a yellow onion, very finely chopped
- 2 garlic cloves, crushed or minced
- 1/2 orange pepper, finely chopped
- 20 g (2/3 cup) fresh parsley or cilantro, chopped
- 30 ml (2 tbsp) fresh mint, chopped
- Half of a 398 ml can of crushed Italian tomatoes (about 180 g)
- 22.5 ml (1 1/2 tbsp) tomato paste
- 15 ml (1 tbsp) olive oil
- 30 ml (2 tbsp) gluten-free breadcrumbs
- 2.5 ml (½ tsp) paprika
- 2.5 ml (½ tsp) ground cumin
- 2.5 ml (½ tsp) salt
- 0.5 ml (1/8 tsp) pepper
- 3 to 4 pinches of cayenne pepper
Side dish, suggestions:
- Lettuce, cucumber slices, tomato slices, mint leaves and lemon wedges
PREPARATION
Pizza dough:
- Prepare the pizza dough recipe following the instructions given. When shaping your crusts, you can make mini-pizzas if you wish. After the first rising and kneading, separate the dough into 6 to 8 equal balls. Once your balls are ready, flour them lightly and place them on a baking sheet covered with parchment paper then flatten them with your hand to the desired size.
Garnish and cooking:
- In a large bowl, combine all the filling ingredients together, making sure to obtain a well-blended mixture.
- Traditional cooking: Preheat the oven to 180 °C (350 °F). Spread the filling on the pizza dough, pressing lightly so that it adheres well to the crust. Bake on the middle oven rack for about 20 minutes or until the crust is golden brown.
- Hypotoxic cooking: Preheat oven to 110 °C (230 °F). Place filling on a cookie sheet lined with lightly oiled parchment paper. Cook on the center grill for 45 to 60 minutes or until the meat is cooked through. Turn the mixture halfway through cooking.
For the crust (hypotoxic cooking) : Completely bake your crusts in the oven, as directed in the recipe. Once the filling is cooked (as indicated in the previous paragraph), simply spread it over the crust and enjoy!
