Reuben Sandwich, panini style Recipe Gluten-free, dairy-free (casein-free) and hypotoxic

ORGANIC INGREDIENTS

  • 4 slices gluten-free beer bread
  • 170 g Montreal-style smoked meat*, finely sliced (equal to one pack)
  • 4 slices of imitation swiss cheese**
  • 100 g sauerkraut, well drained
  • Olive oil
  • Dill pickles (whole or sliced)

Russian dressing:

  • 125 ml (1/2 cup)  mayonnaise
  • 30 ml (2 tbsp) ketchup
  • 5 ml (1 tsp) Worcestershire sauce
  • 5 ml (1 tsp) prepared horseradish
  • Ground pepper, to taste
  • Pinch of cayenne pepper
  • Salt, to taste

PREPARATION

  1. Spread the Russian dressing on one side of each slice of bread.
  2. Stack the Montreal smoked meat, cheese and sauerkraut on two slices of bread. Cover with another slice of bread.
  3. Brush each outer face of the panini with olive oil.
  4. Toast a few minutes in the panini grill.
  5. Serve with an entire or a slice of dill pickle, as you like.

Russian dressing :
Simply mix all the ingredients. The rest of the sauce will keep for several days in the refrigerator and can accompany all types of salads.

TIP

*For a hypotoxic version, replace with thin slices of roast beef cooked at low temperature.

**If you are not following a dairy-free diet, you can substitute with slices of OKA L’Artisan cheese.


VARIATION

DIJON MUSTARD  (to replace the Russian dressing)

Simply replace the Russian sauce with about 30 ml (2 tbsp) of Dijon mustard.
