People follow gluten-free and casein-free diets to prevent the discomfort or diseases triggered by these two components. Several disorders or diseases are related to gluten/casein (milk protein) intolerance:
Celiac disease
Celiac disease is a permanent and chronic bowel condition that is triggered by gluten, a protein compound found in the grain of many cereals such as wheat, barley and rye. This protein is toxic to people with celiac disease. Its consumption causes an excessive immune reaction that causes an inflammatory destruction of the lining of the small intestine. Common symptoms are stomach aches, muscle cramps, diarrhea or constipation, nausea, bloating, flatulence, ulcers, fatigue, joint pain, weight loss among others. This results in the poor absorption of many nutrients, especially iron, calcium and folic acid, which in the long run can lead to malnutrition, early onset of osteoporosis, arthritis, anemia and potential kidney stones formation. The only remedy is to completely exclude gluten from the diet. Symptoms usually disappear after six to twelve months after starting a gluten-free diet.
Herpetiform dermatitis
Also known as Duhring-Brocq disease, herpetiform dermatitis is a chronic and benign skin condition characterized by a sensation of intense burning and itching. Genetic factors, the immune system and gluten sensitivity play a role in this condition. However, the true cause is still unknown. It affects approximately 1 in 100,000 people.
Gluten sensitivity
Gluten sensitivity is more common than is generally thought. Depending on studies, up to 15% of the population may be affected. Non-celiac gluten sensitivity is not an autoimmune disease as there is no serious damage to the intestinal lining. However, it may lead to multiple inflammation-related health issues, such as arthritis and fibromyalgia.
Combined gluten & casein intolerance
Certain nutrition and diet authors suggest that a gluten-free and casein-free diet may prevent inflammatory diseases and may be beneficial to alleviate depression and anxiety as well as autism for children. Dr. Seignalet, a well-known immunologist, designed the Hypotoxic Diet. He recommends staying away from gluten and casein, and consuming organic products, to prevent inflammatory diseases.
