ORGANIC INGREDIENTS

  • 45 ml (3 tbsp) chia seeds
  • 195 g (1 1/3 cups) all-purpose flour "La Merveilleuse"
  • 10 ml (2 tsp) baking powder
  • 1 ml (1/4 tsp) ground cinnamon
  • 1 ml (1/4 tsp) salt
  • 2 large eggs (110 g)
  • 125 g (1/2 cup) orange juice
  • 85 g (1/3 cup) plant-based milk substitute*
  • 50 g (1/4 cup) light olive oil
  • 45 ml (3 tbsp) maple syrup
  • 15 ml (1 tbsp) zest of organic orange
  • 10 ml (2 tsp) vanilla extract
  • 75 g (3/4 cup) fresh cranberries cut in half

PREPARATION

  1. Grind the chia seeds finely in a coffee grinder.
  2. In a bowl, mix the ground chia, flour, baking powder, cinnamon and salt. Set aside.
  3. In a large bowl, beat together the eggs, orange juice, plant-based milk, oil, maple syrup, orange zest, and vanilla extract.
  4. Incorporate the dry mixture into the liquids and beat until the batter begins to thicken.
  5. Using a wooden spoon, stir the cranberries into the batter.
  6. Place some of the batter onto the preheated waffle iron, which has been lightly greased with oil. Spread it out slightly if necessary and cook until the waffle is golden brown.
