Cream of celery and swiss chard Recipe Gluten-free, dairy-free (casein-free) and vegan.

YIELD: 2 L (8 CUPS)



ORGANIC INGREDIENTS

  • 30 ml (2 tbsp) olive oil1 yellow onion, minced
  • 1 clove garlic, crushed or minced
  • 390 g (3 cups) celery, cut into large chunks
  • 450 g (3 cups) potatoes, peeled
  • 750 ml (3 cups) broth (chicken or vegetable)
  • 2,5 ml (1/2 tsp) salt and cubed
  • 2 apples, peeled and cubed (about 300 g)
  • 0,5 ml (1/8 tsp) pepper
  • 150 g (3 cups) swiss chard, cut into large pieces
  • 15 ml (1 tbsp) fresh mint, finely cut

PREPARATION

  1. In a large pan, saute the onion and celery in oil on medium heat for about 5 minutes.
  2. Add the potatoes, apples, broth, salt and pepper.
  3. Bring to a boil, cover, then let simmer for about 10 minutes on low heat.
  4. Add the Swiss chard and mint, cover and cook another 5 minutes or until vegetables are soft.
  5. Liquefy in a blender and adjust seasoning to taste.
