Chia pudding with blueberries Recipe Gluten-free, dairy-free (casein-free) and vegan.

ORGANIC INGREDIENTS
- 400 g (3 cups) blueberries, fresh or frozen
- 125 g (1/2 cup) unfiltered apple juice*
- 125 g (1/2 cup) canned coconut milk
- 15 ml (1 tbsp) maple syrup
- 10 ml (2 tsp) lemon juice
- 5 ml (1 tsp) minced fresh mint
- 5 ml (1 tsp) vanilla extract
- 55 g (1/3 cup) chia seeds
PREPARATION
- Place all the ingredients except the chia seeds in the blender and purée until relatively smooth.
- Pour this purée into a resealable container and add the chia seeds. Mix well and refrigerate for 12 hours.
Whip up this pudding the night before in no time for a quick, on-the-go breakfast. Rich in omega-3s, chia is an excellent source of fiber.
TIP
*You can easily find old-fashioned apple juice in the refrigerated juice section of many grocery stores. It is a freshly pressed, unfiltered juice that showcases the full flavor of the apple.
