ORGANIC INGREDIENTS
- 1 large sweet potato (340 g)
- 2 medium eggs
- 120 g (1/2 cup) plant-based milk substitute
- 50 g (1/4 cup) light olive oil
- 135 g (1 cup) all-purpose flour "La Merveilleuse"
- 5 ml (1 tsp) baking powder
- 5 ml (1 tsp) onion powder
- 3 ml (1/2 tsp) salt
- 15 ml (1 tbsp) chopped fresh parsley
PREPARATION
- Peel the sweet potato and cut into cubes.
- Steam the cubes until completely soft.
- Meanwhile, in a bowl, combine the eggs, milk substitute, and oil. Set aside.
- Mash the cooked sweet potatoes into a smooth puree. Add to the liquids.
- In a separate bowl, combine the flour, baking powder, onion powder, and salt.
- Combine the dry mixture with the liquids until the batter is smooth.
- Add the parsley, mix well.
- In a preheated and greased waffle iron, cook your waffles.
For crispness, lightly brush the waffle iron with oil before each waffle.
