TIP

*Increasingly popular, garlic scapes are easy to digest and do not give garlic breath. It is therefore an interesting alternative to garlic and green onions. Le Petit Mas, a farm specializing in growing garlic in the Eastern Townships, has developed garlic scapes fermented in oil. Fermentation, this millennial process of preservation, gives garlic scapes an incomparable taste in addition to maintaining the content of vitamins and nutrients and producing enzymes that are beneficial for the digestive system. Garlic scapes fermented in oil enhance any recipe (mayonnaise, pasta, pizza, vinaigrette, etc.), without masking the delicate flavors. Ready and quick to use, they are also ideal for healthy recipes: no added sugar, no salt, no allergens, no cholesterol, no gluten and no lactose!
