ORGANIC INGREDIENTS

  • 15 ml (1 tbsp) olive oil
  • 1 apple, peeled, cored, and chopped
  • 1 zucchini, chopped
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 375 g ground pork
  • 335 g gluten-free sausage meat
  • 80 g (1/2 cup) gluten-free breadcrumbs*
  • 1 egg
  • 2,5 ml (1/2 tsp) dried fennel seeds

PREPARATION

  1. In a large pan, heat the oil over medium heat and sauté the apple, zucchini, onion and garlic for 5 minutes.
  2. Preheat the oven to 400 °F (205 °C).
  3. In a large bowl, mix all the ingredients. Using your hands can be helpful to ensure the ingredients are well combined.
  4. Divide the mixture into muffin tins lined with paper baking cups.
  5. Cook on the center rack for 30 minutes, or until the meat is fully cooked.

Dry slices of bread in the oven at 120 °C (250 °F). Once the bread is completely dry, simply crumble it in a blender. That's all there is to it! Store your breadcrumbs in a glass jar for future use.
