Guacamole with mango Recipe Gluten-free, dairy-free (casein-free), hypotoxic and vegan

YIELD: 435 ML (1 3/4 cup)


ORGANIC INGREDIENTS

  • 2 ripe avocados
  • 15 ml (1 tbsp) fresh lime juice
  • 1 Ataulfo mango, just ripe, cut into small cubes
  • 45 ml (3 tbsp) fresh cilantro, chopped
  • 15 ml (1 tbsp) red onion, finely chopped (or one shallot, finely chopped)
  • 1 ml (1/4 tsp) salt

PREPARATION

  1. Cut the avocado in half lengthwise and remove the pit.
  2. Scoop out the flesh with a spoon then crush it with a fork adding the lime juice. The lime juice will keep the avocado from darkening.
  3. In a medium bowl, combine all the ingredients.
  4. Refrigerate until ready to serve. Can be refrigerated for up to 24 hours.
