Guacamole with mango Recipe Gluten-free, dairy-free (casein-free), hypotoxic and vegan

YIELD: 435 ML (1 3/4 cup)
ORGANIC INGREDIENTS
- 2 ripe avocados
- 15 ml (1 tbsp) fresh lime juice
- 1 Ataulfo mango, just ripe, cut into small cubes
- 45 ml (3 tbsp) fresh cilantro, chopped
- 15 ml (1 tbsp) red onion, finely chopped (or one shallot, finely chopped)
- 1 ml (1/4 tsp) salt
PREPARATION
- Cut the avocado in half lengthwise and remove the pit.
- Scoop out the flesh with a spoon then crush it with a fork adding the lime juice. The lime juice will keep the avocado from darkening.
- In a medium bowl, combine all the ingredients.
- Refrigerate until ready to serve. Can be refrigerated for up to 24 hours.
