ORGANIC INGREDIENTS
- 8 chicken drumsticks (remove skin)
- 30 ml (2 tbsp) cocoa
- 5 ml (1 tsp) ground cinnamon
- 2.5 ml (1/2 tsp) ground cumin
- 2.5 ml (1/2 tsp) ground coriander
- 1 ml (1/4 tsp) ground cloves
- 1 ml (1/4 tsp) cayenne pepper
- 2.5 ml (1/2 tsp) salt
- 1 ml (1/4 tsp) pepper
- 30 ml (2 tbsp) olive oil or coconut oil
- 1 yellow onion, finely chopped
- 2 garlic cloves, squeezed or minced
- 360 g (2 1/2 cups) butternut squash, peeled and cut into 2.5 cm (1 inch) cubes
- 15 ml (1 tbsp) fresh ginger, grated
- 500 ml (2 cups) broth (chicken or vegetables)
- 100 g (2/3 cup) semi-sweet chocolate chips
- 60 ml (4 tbsp) organic cornstarch, diluted in the same amount of water
- 40 g (1/2 cup) green onions, chopped
- 10 g (1/3 cup) fresh cilantro, chopped
PREPARATION
- In a small bowl, mix together cocoa, spices, salt and pepper. Set aside.
- Preheat the oven to 150 °C (300 °F).
- In a large saucepan, heat the oil. Sauté the onion and garlic over medium-low heat for 1 minute. Add the squash and sauté for 4 to 5 minutes.
- Add the spice blend and ginger and sauté for 2 more minutes, stirring continuously, to enhance the flavor of the spices.
- Add the broth and chocolate chips.
- Mix together using a whisk until the chocolate is melted. Remove from heat.
- In an ovenproof dish, place the drumsticks. Pour in the chocolate sauce mixture to completely cover the chicken.
- Cover and bake on the center rack for about 1 1/2 hours or until the drumsticks have reached an internal temperature of 74 °C (165 °F).
- When out of the oven, gently remove the chicken drumsticks and keep warm.
- Place the cooking broth in the blender and beat on high speed until smooth and homogeneous.
- Transfer the sauce to a medium saucepan and bring to a boil over medium heat, stirring gently. Add the cornstarch and water mixture and continue cooking, stirring constantly with a whisk, until thickened.
- Add the cilantro and green onions and mix everything well. Place the chicken drumsticks in the sauce to coat them well, then serve.
