Beef tartare Recipe Gluten-free, dairy-free (casein-free).

ORGANIC INGREDIENTS

  • 225 g fresh beef (top round is perfect for this type of recipe)
  • 1 green onion, finely chopped
  • 30 ml (2 tbsp) dill pickles, minced
  • 15 ml (1 tbsp) mayonnaise
  • 15 ml (1 tbsp) light olive oil
  • 5 ml (1 tsp)  Worcestershire sauce
  • 2,5 ml (1/2 tsp) Dijon mustard
  • 2,5 ml (1/2 tsp) whole grain mustard
  • 2,5 ml (1/2 tsp) maple syrup
  • Sriracha to taste
  • Salt / pepper to taste

PREPARATION

  1. Using a sharp knife, cut the meat into very small cubes. Make sure to remove all the fat.
    If desired, your cut meat could be kept cold in a bowl sitting on ice.
  2. In a separate bowl, combine all the other ingredients.
  3. Add the meat and adjust seasoning, if needed.
  4. Cover and let rest 30 minutes in the refrigerator before serving.
